Hot Honey Halloumi
Salty, squeaky fried halloumi with hot honey poured over it in the pan so it sizzles and turns sticky. Ten minutes, one pan, gone in about thirty seconds.

Ingredients
- 2 × 225g blocks halloumi
- 1 tbsp plain flour
- 1 tbsp olive oil
- 3 tbsp Ouro Habanero Infused Honey
- ½ lemon
- 1 tsp fresh thyme leaves, or a small handful of chopped mint
- 1 tsp toasted sesame seeds (optional)
Method
- Cut each block of halloumi into 8 slices about 1cm thick. Pat dry with kitchen paper.
- Dust the slices lightly in the flour and shake off the excess. It gives a crisper, more even crust.
- Heat the oil in a large non-stick frying pan over a medium-high heat. Add the halloumi in a single layer (in two batches if your pan is small) and fry for 2–3 minutes each side until deep golden.
- Take the pan off the heat. Drizzle the Ouro Habanero Infused Honey straight over the halloumi – it will bubble and loosen in the residual heat. Turn the slices once to coat.
- Squeeze over the lemon, scatter with thyme or mint and sesame seeds, and serve immediately while it's hot and soft.
Tips
- Serve it hot. Halloumi turns rubbery as it cools, so cook it last and get it to the table fast.
- Honey off the heat. Adding it to a pan that's still on a high flame will burn it in seconds.
- Halloumi fries. Cut the blocks into 1cm batons, toss in 2 tbsp cornflour, and air-fry at 200°C for 8–10 minutes or bake on a lined tray at 200°C (fan) for 15–18 minutes, turning halfway. Drizzle with hot honey and sprinkle with pomegranate seeds.
- Make it a meal. Stuff into warm pittas with shredded lettuce, tomato and yoghurt, or pile on toasted sourdough with smashed avocado and a fried egg for brunch.
- On the barbecue. Grill thick slices over a medium heat for 2 minutes a side, then drizzle once they're off the grill.
